2 cups walnuts, soaked overnight
2 Tbsp tamari or soy sauce
2 Tbsp ground cumin
1 Tbsp extra virgin olive oil
1 tsp paprika
1 tsp oregano
1 tsp salt
¼ tsp chipotle OR cayenne

Throw everything in the food processor and process until the texture of mince meat (roughly ground)."
