Fresh Corn & Scallion Pancakes, Asian Style. {Vegetarian Recipe} from Erica Leibrandt

"2 egg replacers or chia eggs instead of 2 eggs, separated
sea salt and freshly ground black pepper
1/2 cup chopped scallion or green onion
Spring_onion_pancake_2013
1 tsp minced jalapeƱo or Thai chili or red pepper flakes to taste
2 cups fresh corn just stripped from the cob (great way to make use of leftover corn)
1 t/l soy sauce
1/4 cup all purpose flour
4 t/l OR coconut oil instead of butter (or substitute peanut oil)
